How do we do this? We use food that is in perfect condition but is not sold on the market and would otherwise be destroyed. They usually come from overproduction or do not conform to the norm in terms of size and growth.
We obtain the vegetables for the jus (basic sauces) from "Gmüesgarte", a company that offers these foods from the region. We have also been working with Schweizer Tafel for a few years now. Schweizer Tafel supplies large quantities of ripe fruit at short notice, which they can no longer distribute and which have to be processed very quickly. In return, we pay the value of the goods and process fruit and vegetables into sauces or jams. In this way, the kitchen team saved around 3.2 tonnes of food in 2024. And the guests benefit from homemade jam at the breakfast buffet.
